Bitterness and burning are two important positive features of early harvest cold-pressed olive oil. Bitterness is characteristic of olive oil obtained from early harvest raw materials - green olives. The phenolic compounds found in green olives are responsible for the bitter tone of the taste. Their presence or absence in the oil will give it more or less density. Bitterness indicates that the oil has a longer shelf life, as phenolic compounds are powerful antioxidants and have a beneficial effect on our health. Therefore, since biophenol is a priority for us, we carefully approach the selection of raw materials for our oil.
